Wine cellar
The essential condition to obtain excellent wines is to have excellent grapes. That’s why we take care of our vineyards with great attention. After the harvest, the grapes to be vinified in red wine are selected manually in our sorting plant, so that only the best grapes are vinified. As soon as the grapes arrive at the wine cellar, we try to obtain varietal wines as much as possible, through traditional methods, modern technology and delicate processing. We also try to bring out the typical traits of the territory and the peculiarities of each vintage. The Pino Nero and Merlot red wines are refined in barriques, while our Pinot Bianco is refined in acacia barrels of 450 to 1300 litres, so that it fully expresses its particular notes of apple and honey. The Schiava, Moscato Giallo and Gewürztraminer (Aromatic Traminer) varieties are refined in steel barrels. All of our wines are stored in the bottle for the time necessary to fully develop their harmonious traits, before they are sent to market. In 2003 the underground annex to the existing wine cellar of steel barrels was completed. A large cellar with barriques now ensures ideal conditions for long periods of refinement of our wines.
